Italian Roasted Veggies

Ingredients:

  • 1 head broccoli, chopped

  • 6 medium red potatoes, sliced

  • 2 bell peppers, chopped

  • 1 tablespoon olive oil

  • 1 teaspoon basil

  • 1 teaspoon oregano

  • 1 teaspoon parsley

  • 1 teaspoon garlic powder

  • ½ teaspoon thyme

  • ½ teaspoon onion powder

  • ¼ teaspoon red pepper flakes

  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400 and grease deep baking dish. Add chopped vegetables to baking dish.

  2. In small bowl, combine oil and seasonings; mix well. Once seasoning mixture is combined, pour over vegetables and stir until thoroughly coated.

  3. Bake for 15 minutes. Stir and bake an additional 15 minutes. Let cool and enjoy!
