Ingredients:
3 medium red potatoes
2 tablespoons butter
¼ yellow onion, chopped
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon pepper
1 ½ tablespoons parsley
Directions:
Place potatoes in large pot and add water until potatoes are covered. Over high heat, bring water to boil and cook potatoes until a fork slips out when poked (about 20 minutes). Drain in colander and set aside for later.
In same pot, melt butter. Once melted, saute onions and garlic for a few minutes. Remove from heat and stir in salt, pepper, and parsley. Add cooked potatoes to mixture and stir/mash with fork until thoroughly coated and lightly crushed. Serve with Garlic Beef Tips and enjoy!
