Ingredients:
½ lb chicken breast
¾ cup BBQ sauce
Salt and pepper, to taste
4 corn tortillas
1 cup shredded cheese
Directions:
Preheat oven to 350. Line baking sheet with parchment paper, and place tortilla shells on prepared sheet.
While oven is preheating, bring water to a boil in medium pot over high heat. Add chicken and boil until cooked through. Once chicken is cooked, shred.
Once oven is preheated, bake tortillas for 2-3 minutes, or until slightly crispy and curling along the edges.
Combine shredded chicken, salt, pepper and ½ cup of BBQ sauce in bowl until completely covered. Evenly divide mixture onto each of the tortillas and top with shredded cheese.
Bake for 6-8 minutes, or until cheese is melted. Remove from oven and drizzle with remaining BBQ sauce. Enjoy!
