Ingredients:
½ head of cauliflower, diced and chopped
21 oz canned diced tomatoes w/ stuff
½ lb ground turkey
2 eggs
¼ cup parmesan cheese
¼ teaspoon salt
1 cup spinach
Directions:
Preheat oven to 350. In food processor or blender, blend diced tomatoes until a sauce. In large pot, combine tomato sauce with cauliflower and stir to coat. Over medium-high heat, bring sauce to a boil and lower to simmer once bubbling. Cover and cook for 15 minutes.
While cauliflower is cooking, saute turkey in separate skillet. Drain, and save for later.
In medium bowl, beat eggs, shredded cheese, and salt. Save for later.
After cauliflower is tender, stir in spinach and simmer out excess moisture. Remove pot from heat and stir in turkey as well as egg/cheese mixture.
Spread mixture in oven safe glass pan. Top with more cheese. Bake for 30 minutes until the eggs are set and cheese is bubbly on top.
