Chunky Tomato Soup

Servings: 2

Ingredients:

  • ½ tablespoon butter

  • 2 ½ teaspoons olive oil

  • ¼ onion, chopped

  • 1 teaspoon minced garlic

  • 1 tablespoon tomato paste

  • ¼ teaspoon thyme

  • ¼ teaspoon basil

  • 14 oz diced tomatoes

  • ½ teaspoon sugar

  • 1 cup water

  • 1 bouillon cube

  • ⅓ cup mascarpone cheese

  • Salt and pepper to taste

Directions:

  1. In large saucepan, heat butter and olive oil over medium heat. Add onions and saute for a few minutes. While onions are cooking microwave water and bouillon cube until fully dissolved. Set aside for later.

  2. Once they’ve turned color, add garlic and cook for an additional minute.

  3. Add tomato paste, thyme, basil, salt, and pepper; stir until onions are coated. Add diced tomatoes with juices, sugar and water with dissolved bouillon cube.

  4. Reduce heat to low, cover, and simmer for 30 minutes.

  5. Stir in cheese and simmer until thoroughly combined. Enjoy!
