Ingredients:
4 oz pasta noodles
1 tablespoon olive oil
½ lb chicken breast, cubed
½ teaspoon seasoning salt
3 tablespoons butter
¼ cup onion, chopped
2 teaspoons minced garlic
½ head broccoli, chopped
⅛ teaspoon nutmeg
1 teaspoon crushed red pepper
1 teaspoon basil
Salt and pepper to taste
⅔ cup mascarpone cheese
½ cup Parmesan cheese
½ cup reserved pasta water
Directions:
In large saucepan bring generously salted water to boil. Add noodles and stir every so often until noodles are soft.
While noodles are cooking, heat olive oil over medium heat in large skillet. Add cubed chicken and sprinkle with seasoning salt. Fry chicken on each side until golden and cooked throughout.
Once noodles are cooked, drain (place measuring cup under colander to catch pasta water - set aside for later) and rinse. Place cooked chicken in colander as well, and set aside for later.
In same skillet, melt butter over medium heat. Saute onion for a few minutes and add garlic. Saute for an additional minute, or until garlic is fragrant. Add broccoli, nutmeg, crushed red pepper, basil, salt, and pepper. Cover and steam until broccoli is desired softness.
When broccoli is done steaming, stir together cheeses, pasta water, and salt and pepper until melted and thoroughly combined.
Combine broccoli, noodles, chicken, and cheese sauce in large saucepan. Stir until evenly coated. Serve with Parmesan cheese and enjoy!
