Egg Roll in a Bowl

Servings: 2

Ingredients:

  • ½ lb ground turkey

  • 1 tablespoon olive oil

  • ¼ onion, chopped

  • 2 teaspoons minced garlic

  • 2 teaspoons ginger

  • ¼ teaspoon pepper

  • ⅓ bag coleslaw mix

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

Directions:

  1. Heat oil in large skillet over medium heat. Add onion and saute for 2-3 minutes. Toss in garlic and saute for an additional minute.

  2. Add turkey to skillet, breaking into small pieces. Season with ginger and pepper, stirring until completely coated.

  3. Once turkey is fully cooked, move to edges of skillet and pour coleslaw mix into center. Cover with lid and allow coleslaw to steam for a few minutes.

  4. Remove lid, stirring all ingredients together and topping with soy sauce and sesame oil. Once everything is well coated, remove from heat and enjoy!
