Ground Turkey Enchilada Skillet

Ingredients:

  • 1 tablespoon butter

  • 1 tablespoon flour

  • 2 teaspoons minced garlic

  • ¼ cup onion, chopped

  • 1 jalapeno, chopped

  • 1 bouillon cube

  • ½ cup water

  • ½ teaspoon salt

  • ¼ teaspoon oregano

  • ¼ teaspoon chili powder

  • ½ lb ground turkey

  • ⅓ cup sour cream

  • 4 corn tortillas, cut into pieces

  • ½ cup shredded cheese

Directions:

  1. In large skillet, heat butter over medium heat. Add flour and cook for 1 minute. Whisk in water (with bouillon cube dissolved into). Continue stirring until mixture is smooth.

  2. Stir in salt, oregano, and chili powder. Stir and add ground turkey. Bring to a simmer and reduce heat to low. Cover skillet and cook until turkey is browned; stirring occasionally.

  3. While turkey is cooking, cut tortillas into small chunks. Once turkey is cooked, stir in sour cream and tortilla chunks; stirring until combined. Top with shredded cheese. Cover skillet and cook for additional 5-8 minutes, or until cheese is bubbly and melted. Enjoy!
