Ingredients:
1 tablespoon butter
1 tablespoon flour
2 teaspoons minced garlic
¼ cup onion, chopped
1 jalapeno, chopped
1 bouillon cube
½ cup water
½ teaspoon salt
¼ teaspoon oregano
¼ teaspoon chili powder
½ lb ground turkey
⅓ cup sour cream
4 corn tortillas, cut into pieces
½ cup shredded cheese
Directions:
In large skillet, heat butter over medium heat. Add flour and cook for 1 minute. Whisk in water (with bouillon cube dissolved into). Continue stirring until mixture is smooth.
Stir in salt, oregano, and chili powder. Stir and add ground turkey. Bring to a simmer and reduce heat to low. Cover skillet and cook until turkey is browned; stirring occasionally.
While turkey is cooking, cut tortillas into small chunks. Once turkey is cooked, stir in sour cream and tortilla chunks; stirring until combined. Top with shredded cheese. Cover skillet and cook for additional 5-8 minutes, or until cheese is bubbly and melted. Enjoy!
