Ingredients:
½ lb Italian turkey sausage
½ medium onion (chopped)
1 teaspoon minced garlic
2 teaspoons olive oil
1 (15 ounce) can Cannellini beans (rinsed/drained)
2 bouillon cubes
2 cups water
7 oz canned diced tomatoes w/basil, oregano and garlic (undrained)
2 cups spinach
Ground pepper
Parmesan cheese
Directions:
Cook sausage in skillet or on grill. Cut into ½ inch slices.
In large pot over medium-high heat, cook onion and garlic in oil until tender. Add beans, bouillon cubes, water, tomatoes, and pepper; bring to a boil. Reduce heat, cover, and simmer for 5 minutes.
Stir in sausage and spinach; simmer for an additional 3 minutes. Serve with shredded parmesan cheese.
