Spinach + White Bean Sausage Soup

Ingredients:

  • ½ lb Italian turkey sausage

  • ½ medium onion (chopped)

  • 1 teaspoon minced garlic

  • 2 teaspoons olive oil

  • 1 (15 ounce) can Cannellini beans (rinsed/drained)

  • 2 bouillon cubes

  • 2 cups water

  • 7 oz canned diced tomatoes w/basil, oregano and garlic (undrained)

  • 2 cups spinach

  • Ground pepper

  • Parmesan cheese

Directions:

  1. Cook sausage in skillet or on grill. Cut into ½ inch slices.

  2. In large pot over medium-high heat, cook onion and garlic in oil until tender. Add beans, bouillon cubes, water, tomatoes, and pepper; bring to a boil. Reduce heat, cover, and simmer for 5 minutes.

  3. Stir in sausage and spinach; simmer for an additional 3 minutes. Serve with shredded parmesan cheese.
