Turkey Taco Bowls

Servings: 8-10

Ingredients:

  • 2 lbs ground turkey

  • 1 package taco seasoning

  • 2 cans corn kernels, drained and rinsed

  • 2 cups brown rice

  • 4 cups water

  • 2 pints cherry tomatoes

  • ½ medium red onion

  • 2 jalapeños

  • Juice of 1 lime

  • 1 tablespoon dried cilantro

  • 2-3 avocados

  • Shredded cheese

Directions:

  1. Place rice and water in medium pot over medium heat. Cook until rice is tender.

  2. In separate large skillet, cook turkey until brown and broken into small pieces (do not drain). Add taco seasoning, and stir until fully coated.

  3. While turkey and rice are cooking, cut cherry tomatoes, jalapeños, and red onion. Combine in medium bowl with lime juice and cilantro flakes.

  4. Once turkey is cooked, evenly distribute turkey, rice, and corn in tupperware; sprinkle with shredded cheese. In separate, smaller tupperware even distribute pico mix. Cut up avocados and place in plastic bag or tupperware.

  5. When warming up, microwave turkey mixture for 1-1.5 minutes. Once warmed add avocados and pico. Enjoy!
