Hi there! If you’re following along, welcome to the first week of ‘Lineups’! Designed with everything you need for a 40 hour week of food consisting of 4-5 days of meal prepped lunches, 4 different dinners, and a grocery list.
I’ve set this up to serve 2 people throughout the week, but if you’re cooking for twice as many people, simply double each recipe and purchase twice the amount of groceries listed. If you’re cooking for just you, cut the amount of ingredients for lunch in half, and I would recommend pairing two recipes together (Asparagus + Italian sausage Pasta with White Bean + Spinach Sausage Soup OR Cauliflower Baked Ziti with Ground Turkey + Roasted Cauliflower).
At the end of the week, you might have leftovers (that’s okay, heat them up for lunch on Sunday!), and you might have leftover ingredients if you’re cooking for just yourself (that’s okay too, toss these in with your favorite breakfast ingredients for a mean hash). There’s always a way around wasting food, so if you’re stuck and can’t figure out what to do with them, please shoot me a message, and I’ll do my best to get back to you with suggestions.
Now, enough rambling! Below are five recipes for a tasty, relatively waste-less week of meals. It may be cold outside, but you and whoever you share these recipes with will be warm on the inside. Happy cooking!
